2 boneless beef sirloin steaks (about 1 inch thick)

2 tablespoons olive oil

Salt and black pepper to taste

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon unsalted butter

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

Fresh lemon juice, to taste

Instructions
 

Start by patting the steaks dry with paper towels. Season generously with salt and black pepper on both sides.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks to the pan and sear for about 3-4 minutes on each side for medium-rare, or until reaching your desired doneness.

      Remove the steaks from the skillet and allow them to rest on a plate, loosely covered with foil.

        In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant, but not browned.

          Stir in the Worcestershire sauce and soy sauce, scraping up any brown bits from the bottom of the skillet. Cook for about 1-2 minutes to let the flavors blend.

            Add the Dijon mustard and butter, stirring until the butter is melted and the sauce is smooth. Adjust seasoning with salt, black pepper, and a splash of fresh lemon juice according to taste.

              Return the rested steaks to the pan, spoon the sauce over them, and let them heat through for another minute.

                Remove from heat and top with fresh parsley and chives before serving.
