4 cups frozen hash browns, thawed

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

3 tablespoons melted butter

6 large eggs

1 cup heavy cream

1 cup fresh spinach, chopped

1 cup fresh asparagus, chopped into 1-inch pieces

1/2 cup cherry tomatoes, halved

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, combine the thawed hash browns, melted butter, shredded cheddar cheese, grated Parmesan, garlic powder, and a pinch of salt and pepper. Mix until well combined.

      Press the hash brown mixture into the bottom and up the sides of a greased 9-inch pie dish to form a crust.

        Bake the hash brown crust in the preheated oven for 20 minutes or until golden brown and crispy. Remove from the oven and set aside to cool slightly.

          In a large mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.

            Stir in the chopped spinach, asparagus, and cherry tomatoes into the egg mixture.

              Pour the egg and vegetable mixture over the baked hash brown crust.

                Return the quiche to the oven and bake for an additional 30-35 minutes, or until the egg is set and the top is lightly golden.

                  Once cooked, remove from the oven and let it cool for a few minutes.

                    Slice the quiche into wedges and garnish with fresh herbs before serving.
