2 cups sushi rice

2 ½ cups water

½ cup rice vinegar

3 tablespoons sugar

1 teaspoon salt

1 lb sushi-grade tuna, diced

2 tablespoons sriracha

1 tablespoon mayonnaise (preferably Kewpie for creaminess)

1 avocado, sliced

2 green onions, finely chopped

Sesame seeds, for garnish

1 nori sheet, cut into strips

Vegetable oil, for frying

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes until the water is absorbed. Remove from heat and let sit for 10 minutes.

    Season the Rice: In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Drizzle this mixture over the cooked rice and fold gently to combine without mashing the rice. Allow the rice to cool to room temperature.

      Prepare the Tuna Mix: In a bowl, combine the diced tuna, sriracha, and mayonnaise. Mix well, adjusting the spiciness by adding more sriracha if desired. Set aside.

        Form Rice Cakes: Once the rice has cooled, wet your hands with water to prevent sticking. Take a handful of rice (about 3 tablespoons) and shape it into a rectangular rice cake, about 1-inch thick. Repeat until all rice is shaped.

          Fry the Rice Cakes: In a large skillet, heat about ½ inch of vegetable oil over medium-high heat. Once the oil is hot, carefully add the rice cakes, frying until golden and crispy on each side, about 2-3 minutes per side. Drain on paper towels to absorb excess oil.
