Spicy Harissa Roasted Pork Tenderloin

1.5 lbs pork tenderloin

3 tablespoons harissa paste

2 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon cumin

1 teaspoon coriander

Salt and pepper to taste

Zest and juice of 1 lemon

Fresh cilantro for garnish

1 cup cherry tomatoes, halved

1 red onion, cut into wedges

Instructions
 

Preheat your oven to 425°F (220°C).

    In a bowl, combine the harissa paste, olive oil, minced garlic, smoked paprika, cumin, coriander, lemon zest, salt, and pepper. Mix well to form a thick marinade.

      Rub the harissa mixture all over the pork tenderloin, ensuring it's well-coated. Let it marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

        In a large oven-safe skillet or baking dish, toss the cherry tomatoes and onion wedges with a drizzle of olive oil, salt, and pepper. Spread them evenly.

          Place the marinated pork tenderloin on top of the vegetables in the skillet.

            Roast in the preheated oven for about 25-30 minutes or until the internal temperature of the pork reaches 145°F (63°C).

              Once done, remove the skillet from the oven and let the pork rest for 5 minutes before slicing.

                Garnish with fresh cilantro before serving.
