4 large eggs

1/4 cup milk

1/2 teaspoon chipotle powder

1/2 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup cooked chorizo (or vegetarian chorizo)

1/2 cup diced bell peppers (mix of red and green)

1/2 cup diced onions

1 cup fresh spinach

4 large flour tortillas

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 avocado, sliced

Hot sauce, to serve

Instructions
 

In a medium bowl, whisk together the eggs, milk, chipotle powder, cumin, salt, and pepper until well combined.

    Heat the olive oil in a skillet over medium heat. Add the diced onions and bell peppers, and sauté for about 5 minutes or until they're soft and fragrant.

      Add the cooked chorizo to the skillet and cook for another 3-4 minutes until heated through. Then, stir in the fresh spinach and cook until wilted, about 1-2 minutes.

        Pour the egg mixture into the skillet with the chorizo and vegetables. Stir gently until the eggs are fully cooked and scrambled, roughly 5-7 minutes.

          Warm the flour tortillas in a microwave or on a dry skillet for a few seconds until soft.

            To assemble each burrito, place about 1/4 of the egg mixture in the center of a tortilla. Sprinkle with a tablespoon of shredded cheddar cheese and top with avocado slices and chopped cilantro.

              Fold in the sides of the tortilla, then roll it up from the bottom to fully enclose the filling.

                Serve hot with your favorite hot sauce drizzled on top or on the side.
