Smoky Kielbasa & Cheesy Potato Casserole

1 lb smoked kielbasa, sliced into rounds

4 large russet potatoes, peeled and thinly sliced

1 medium onion, chopped

2 cups shredded cheddar cheese

1 cup sour cream

1 cup milk

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick spray or a little olive oil.

    In a large skillet over medium heat, sauté the chopped onion in a bit of oil until it becomes soft and translucent, about 5 minutes. Add the sliced kielbasa and cook until browned, approximately 5 more minutes. Remove from heat.

      In a large bowl, combine the sour cream, milk, garlic powder, paprika, black pepper, and salt. Mix well until smooth and set aside.

        Start layering your casserole: First, spread half of the thinly sliced potatoes evenly across the bottom of the prepared baking dish. Next, add half of the sautéed kielbasa and onion mixture, then sprinkle with 1 cup of shredded cheddar cheese.

          Repeat this layering process again starting with the remaining potatoes, followed by the rest of the kielbasa and onions, and finish off with the remaining cup of cheddar cheese on top.

            Pour the sour cream and milk mixture evenly over the top of the casserole, ensuring all the potatoes are well-covered.

              Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

                Once done, remove from the oven and let it cool slightly. Garnish with chopped fresh parsley before serving.
