1 lb smoked sausage, sliced into rounds

4 medium-sized Yukon gold potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Start by heating the olive oil in a large skillet over medium-high heat.

    Add the sliced smoked sausage to the skillet, cooking until browned and slightly crispy, about 6-8 minutes. Stir occasionally to ensure even cooking.

      While the sausage is cooking, prepare the potatoes. In a separate pot, add the diced Yukon gold potatoes and cover with water. Bring to a boil and cook for about 8-10 minutes, until just fork-tender. Drain and set aside.

        Once the sausage is browned, add the chopped onion and red bell pepper to the skillet. Sauté for 3-4 minutes until the onion becomes translucent.

          Add the minced garlic, smoked paprika, oregano, thyme, and cooked potatoes to the skillet. Season with salt and pepper to taste.

            Gently toss all the ingredients together, allowing the flavors to meld for an additional 5-7 minutes. Let everything cook until the potatoes start to brown slightly, stirring occasionally.

              Once everything is well-combined and heated through, remove from heat.

                Garnish with fresh parsley before serving.
