200g smoked salmon, thinly sliced

1/4 cup capers, drained

1/4 cup all-purpose flour

2 tablespoons olive oil

1 lemon, zested and juiced

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh parsley, chopped

Salt and cracked black pepper to taste

Microgreens or arugula for garnish (optional)

Prepare the Capers: In a small bowl, toss the drained capers in flour until coated evenly.
