1 cup almond flour

1/4 cup shredded unsweetened coconut

1/4 cup granulated sugar

1/4 teaspoon baking powder

1/4 cup unsweetened cocoa powder

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt

12 whole almonds (for topping)

1/4 cup dark chocolate chips (for drizzling)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the almond flour, shredded coconut, sugar, baking powder, cocoa powder, and salt. Mix well to break any lumps.

      Add the melted coconut oil and vanilla extract to the dry ingredients. Stir until a thick dough forms.

        Using your hands, scoop out portions of the dough (about 1 tablespoon each) and shape them into small balls. Place them on the prepared baking sheet, spacing them about 1.5 inches apart.

          Gently press an almond into the center of each cookie dough ball.

            Bake in the preheated oven for 10-12 minutes, or until the edges are slight golden brown.

              Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                In a small microwave-safe bowl, melt the dark chocolate chips in 15-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the cooled cookies for added flavor and decoration.
