Ingredients
  

1 lb kielbasa, sliced into rounds

4 medium russet potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

2 cups cabbage, chopped (green or purple for color)

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon black pepper

2 cups vegetable broth

2 tablespoons olive oil

Salt to taste

Instructions
 

In a large mixing bowl, combine the diced potatoes, chopped onion, minced garlic, and chopped cabbage. Mix well.

    In the bottom of the slow cooker, drizzle olive oil. Then add the vegetable broth.

      Layer the potato mixture into the slow cooker.

        Sprinkle the sliced kielbasa over the top of the vegetable layer.

          Season with smoked paprika, dried thyme, black pepper, and salt. Gently stir to combine the ingredients without losing structure.

            Cover the slow cooker and set it on low for 6 to 8 hours or high for 3 to 4 hours, until the potatoes are tender and the flavors meld together nicely.

              Once cooked, give it a final stir and adjust seasoning if necessary.

                Let it sit for a few minutes before serving to thicken the flavors.
