1 pound pork sausage, sliced

1 pound bacon, chopped

1 large onion, sliced

4 large potatoes, peeled and diced

2 cups chicken broth

2 cups water

3 carrots, sliced

2 garlic cloves, minced

2 teaspoons dried thyme

1 teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove from pan and set aside, leaving some fat in the skillet.

    In the same skillet, add the sliced pork sausage and cook until browned. Remove and set aside with the bacon.

      In your slow cooker, layer the sliced onion at the bottom followed by the diced potatoes and carrots.

        Sprinkle the minced garlic, thyme, and black pepper over the vegetables.

          Add the cooked bacon and sausage on top of the vegetable layer.

            Pour the chicken broth and water over everything in the slow cooker, adding salt to taste.

              Cover and cook on low for 8 hours or on high for 4 hours until the vegetables are tender and the flavors meld together.

                Once done, gently stir the mixture to combine everything before serving.
