1 can (15 oz) corn kernels, drained

1 can (14.5 oz) diced tomatoes with green chilies (fire-roasted for extra flavor)

1 packet taco seasoning (or homemade using chili powder, cumin, garlic powder)

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

4 cups low-sodium chicken broth

1 teaspoon lime juice

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Avocado slices (optional, for topping)

Sour cream or Greek yogurt (optional, for topping)

Grated cheese (cheddar or Mexican blend, optional, for topping)
