2 cups cooked rotini or egg noodles

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cubed

1 cup onion, diced

2 cloves garlic, minced

1 cup carrots, diced

1 cup celery, diced

1 cup frozen peas

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon dried thyme

½ teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley, for garnish

Cook the Noodles: In a large pot, boil salted water and cook the noodles according to package instructions until al dente. Drain and set aside.
