4 pieces of thick white bread or baguette

2 large eggs

1/2 cup minced beef or chicken (cooked)

1 small onion, finely chopped

1 tablespoon chili sauce

1 tablespoon soy sauce

1/2 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons butter

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a mixing bowl, whisk together the eggs, chili sauce, soy sauce, garlic powder, salt, and pepper.

    Stir in the minced beef or chicken and chopped onion until well combined.

      Heat a non-stick skillet over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the bottom.

        Place one piece of bread in the skillet and pour half the egg mixture over it, letting it soak into the bread for about 1-2 minutes.

          Flip the bread over and cook for another 2-3 minutes until the egg is fully cooked and slightly golden brown.

            Remove the Roti John from the skillet and set it aside. Repeat the process for the second piece of bread using the remaining egg mixture.

              Once both are cooked, slice each Roti John in half or quarters for easy handling.

                Garnish with fresh cilantro or parsley if desired, and serve hot with extra chili sauce on the side.
