chicken thighs, boneless and skinless, diced

can diced tomatoes with their juice

low-sodium chicken broth

teaspoon
dried oregano
1
teaspoon
dried basil

red pepper flakes (optional for heat)

chickpeas, rinsed and drained

frozen green peas

cups
fresh spinach or kale
to taste
salt and pepper

olive oil
for garnish
fresh parsley, chopped
Instructions
In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
Add the minced garlic, carrots, and celery, cooking for another 5-7 minutes until the vegetables soften.
Stir in the diced chicken and cook until the pieces are browned, about 5 minutes.
Pour in the diced tomatoes with their juice and chicken broth. Bring to a boil.
Reduce heat to a simmer and add oregano, basil, red pepper flakes, and salt and pepper to taste.
Add chickpeas and let the soup simmer for about 20 minutes to meld flavors.
In the last 5 minutes of cooking, stir in the frozen peas and fresh spinach or kale until just wilted.
Taste and adjust seasoning if necessary.
Serve hot, garnished with fresh parsley.
