Ingredients

4 salmon fillets (6 oz each)

1 bunch of asparagus, trimmed

1 lb baby potatoes, halved

3 tablespoons olive oil

1 tablespoon Dijon mustard

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh dill, for garnish

Instructions

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper for easier cleanup.

In a mixing bowl, whisk together olive oil, Dijon mustard, honey, minced garlic, smoked paprika, salt, and pepper to make a marinade.

Place the halved baby potatoes in a separate bowl. Drizzle with 1 tablespoon of the marinade and toss to coat well.

Arrange the coated baby potatoes cut-side down on one side of the prepared sheet pan. Roast in the oven for 15 minutes.

While the potatoes roast, prepare the salmon and asparagus. In the same mixing bowl, add the salmon fillets and asparagus spears. Drizzle with the remaining marinade and toss to coat.

After 15 minutes, carefully remove the sheet pan from the oven. Add the salmon fillets and asparagus to the pan, spreading them out evenly on the other side.

Return the sheet pan to the oven and roast for an additional 12-15 minutes, until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.

In the last 2 minutes of cooking, squeeze fresh lemon juice over the salmon and asparagus for an extra zing.

Once done, remove the sheet pan from the oven and let it rest for a few minutes. Garnish with fresh dill before serving.

                    Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 4

                      - Presentation Tips: Serve directly from the sheet pan for a rustic look or plate individual portions. Drizzle any remaining juices over the top, and garnish with extra lemon wedges and dill for added freshness.
