Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 yellow onion, sliced into thin strips

3 tablespoons olive oil

2 tablespoons fajita seasoning (store-bought or homemade)

Juice of 1 lime

Salt and pepper to taste

8 small flour or corn tortillas

Fresh cilantro, chopped, for garnish

Optional toppings: avocado slices, sour cream, salsa, shredded cheese

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the sliced chicken, red and green bell peppers, and onion.

      Drizzle olive oil over the mixture, then sprinkle with fajita seasoning, lime juice, salt, and pepper. Toss everything until evenly coated.

        Spread the chicken and vegetable mixture evenly on a large sheet pan.

          Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender, stirring halfway through cooking for even roasting.

            While the fajitas are baking, warm the tortillas in a non-stick skillet over medium heat for about 30 seconds on each side, or cover them in aluminum foil and place them in the oven for the last 5 minutes of cooking.

              Once the chicken and vegetables are done, remove the sheet pan from the oven and let it cool slightly.

                Serve the sizzling chicken fajitas by placing a generous portion of the chicken and vegetable mix onto each tortilla. Top with fresh cilantro and any optional toppings you desire.
