1 cup canned chickpeas, drained and rinsed

1 cup canned white cannellini beans, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, diced

2 sticks celery, diced

1 red bell pepper, diced

1 zucchini, diced

1 can (14 oz) diced tomatoes with their juice

4 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Add the diced carrots, celery, and red bell pepper to the pot. Cook for around 5 minutes, stirring occasionally.

        Next, add the diced zucchini and continue cooking for an additional 3 minutes.

          Pour in the diced tomatoes (with their juice), vegetable broth, chickpeas, and cannellini beans.

            Season the mixture with dried oregano, ground cumin, smoked paprika, salt, and pepper, and stir well to combine.

              Bring the soup to a gentle boil, then reduce the heat to low, allowing it to simmer uncovered for about 20-25 minutes. Stir occasionally.

                Once the vegetables are tender and the soup has thickened slightly, taste and adjust seasoning if necessary.

                  Serve hot, garnished with chopped fresh parsley and a wedge of lemon on the side for added freshness.
