12 oz cheese tortellini

1 tablespoon olive oil

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

8 oz mushrooms, sliced

1 lb ribeye steak, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 cup provolone cheese, shredded

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion, red bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are softened and translucent.

      Add the Steak: Increase heat to medium-high, add the sliced ribeye steak, and cook until browned, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Add the Liquids: Pour in the beef broth and bring to a simmer. Let it reduce slightly for about 3-5 minutes.
