2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

8 ounces pork belly or pancetta, cut into small cubes

In a large skillet, heat the butter and olive oil over medium heat until melted and hot.

    Add the sliced onions to the skillet. Cook for about 15 minutes, stirring occasionally until they begin to caramelize and soften.

      Sprinkle the sugar, salt, pepper, and thyme over the onions, and continue stirring for another 10 minutes until they are a rich golden brown.
