Ingredients

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

Zest and juice of 1 lemon

Zest and juice of 1 lime

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped

1 cup cooked quinoa (for serving)

Lemon slices (for garnish)

Instructions

Prepare the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Season lightly with salt, pepper, and red pepper flakes. Set aside.

Melt the Butter: In a large skillet, melt the butter over medium heat. Once melted and bubbling, add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook them for about 2-3 minutes on one side without stirring, until they turn pink and opaque. Flip and cook for an additional 2 minutes.

Add Citrus: Pour in the lemon and lime juice, along with the zest of both fruits. Toss the shrimp gently in the sauce, ensuring they are fully coated. Let it simmer for about 1 minute.

Finish and Garnish: Remove from heat and stir in the chopped parsley. Taste and adjust seasoning if necessary.

Serve: Spoon the garlic butter shrimp over a bed of quinoa on individual plates. Drizzle any remaining sauce from the skillet over the shrimp and garnish with lemon slices.

              Prep Time: 10 mins | Total Time: 20 mins | Servings: 4

                - Presentation Tips: Serve the shrimp in shallow bowls or on plates with a sprinkle of parsley on top and an extra wedge of lemon on the side for a pop of color and an added zest.
