1 lb Italian sausage (sweet or spicy, your choice), casing removed

1 medium onion, diced

2 garlic cloves, minced

3 carrots, diced

2 celery stalks, diced

1 bell pepper (red or yellow), diced

6 cups chicken or vegetable broth

1 can (14 oz) diced tomatoes, with juice

2 cups fresh kale or spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish

Instructions
 

Heat olive oil in a large pot over medium-high heat. Add the Italian sausage, breaking it apart with a spatula, and cook until browned, about 6-8 minutes.

    Add the diced onion and cook for another 2-3 minutes until translucent. Stir in the minced garlic, cooking for an additional minute until fragrant.

      Next, add the carrots, celery, and bell pepper, cooking for 5-7 minutes until they start to soften.

        Pour in the chicken or vegetable broth and add the canned diced tomatoes with their juice. Stir to combine.

          Season with dried oregano, thyme, red pepper flakes (if using), salt, and black pepper. Bring the soup to a simmer and let it cook for 15-20 minutes, allowing flavors to meld and vegetables to soften.

            Add the chopped kale or spinach to the soup, stirring gently until it wilts, about 2-3 minutes. Taste and adjust seasonings if necessary.

              Remove from heat and let the soup rest for a few minutes before serving.
