Ingredients

1 pound breakfast sausage, crumbled

4 cups frozen shredded hashbrowns, thawed

8 oz cream cheese, softened

6 large eggs

1 cup milk (or a dairy-free alternative)

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 green onions, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

In a skillet over medium heat, cook the crumbled breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain any excess grease and set aside.

In a large mixing bowl, combine the softened cream cheese, milk, garlic powder, onion powder, salt, and pepper. Whisk until smooth and well blended.

Stir in the thawed hashbrowns and half of the cheddar cheese into the cream cheese mixture until evenly combined.

Add the cooked sausage to the hashbrown mixture and gently fold until incorporated.

In a separate bowl, whisk the eggs. Pour the eggs over the hashbrown and sausage mixture, stirring until everything is evenly coated.

Pour the entire mixture into the prepared baking dish. Spread evenly and top with the remaining cheddar cheese.

Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the cheese is golden and bubbly.

Remove from the oven and let it cool for about 10 minutes before slicing. Garnish with chopped green onions if desired.
