1 pound breakfast sausage, crumbled

8 large eggs

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 cups cubed bread (preferably sourdough or French)

2 cups shredded cheddar cheese

1 cup diced bell peppers (any color)

½ cup chopped green onions

1 teaspoon dried Italian herbs (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large skillet, cook the crumbled breakfast sausage over medium heat until browned and cooked through, about 8-10 minutes. Drain excess fat and set aside.

      In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, and dried Italian herbs (if using) until well combined.

        Layer the bread cubes evenly in the prepared baking dish. Then sprinkle the cooked sausage, diced bell peppers, and half of the green onions over the bread.

          Pour the egg mixture over the layered ingredients, ensuring everything is evenly soaked. Push down any floating bread cubes into the liquid gently.

            Top with the shredded cheddar cheese, spreading it out evenly across the casserole.

              Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes.

                After 35 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown, and the center has set.

                  Remove from the oven and let cool for about 10 minutes before slicing. Garnish with remaining green onions before serving.
