4 large eggs

Cook the Sausages: In a skillet over medium heat, add the sausages. Cook until they are browned and fully cooked, about 8-10 minutes, turning occasionally. Remove from pan and let cool slightly before slicing them into bite-sized pieces.

    Scramble the Eggs: In a bowl, crack the eggs and whisk them together with salt, pepper, garlic powder, and paprika. In the same skillet (after removing excess sausage fat), add olive oil and heat over medium-low. Pour in the egg mixture and scramble until they are just set but still soft, about 2-3 minutes. Remove from heat.

      Prepare the Fillings: In a separate bowl, mix together the shredded cheese, diced bell peppers, and chopped green onions.

        Assemble the Rolls: Lay a tortilla flat on a clean surface. Spread a portion of the scrambled eggs down the center of the tortilla, followed by a generous amount of sliced sausage and the cheese mixture.

          Roll It Up: Fold in the sides of the tortilla and then roll from the bottom up, tucking in the filling as you roll. Repeat with the remaining tortillas.

            Toast the Rolls: Place the rolled tortillas seam side down on a clean skillet over medium heat. Cook for 2-3 minutes on each side, until the tortillas are golden brown and crispy, and the cheese is melted.
