1 pound breakfast sausage, casing removed

8 large eggs

1 cup milk

2 cups shredded cheddar cheese

1 cup diced bell peppers (mixed colors)

1 cup diced onion

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

4 cups cubed day-old bread (preferably a hearty type like sourdough or French)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick spray or butter.

    In a large skillet, over medium heat, cook the sausage until browned, breaking it up with a spoon, about 5-7 minutes. Drain any excess grease.

      Add the diced bell peppers and onions to the skillet. Sauté for an additional 3-4 minutes until softened.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, smoked paprika, salt, and black pepper until well combined.

          Stir in the cooked sausage and vegetable mixture into the egg mixture. Add the cubed bread and half of the cheese, gently folding everything until the bread is evenly coated.

            Pour the entire mixture into the prepared baking dish. Spread it out evenly, and then top with the remaining cheese.

              Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is golden and bubbly.

                Let it cool for a few minutes, then slice into squares and serve warm. Garnish with fresh parsley before serving.
