4 cups red potatoes, cubed

1 large onion, finely chopped

3 cloves garlic, minced

2 tablespoons paprika (preferably Hungarian)

1 teaspoon caraway seeds

1 bell pepper (red or green), diced

1 carrot, sliced

1 can (14 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 tablespoon tomato paste

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and continue to sauté for another minute until fragrant.

      Add the paprika and caraway seeds to the pot, stirring to coat the onions and garlic. Cook for 1-2 minutes to release the spices' aroma.

        Incorporate the diced bell pepper and sliced carrot, cooking for 3-4 minutes until they start to soften.

          Add the cubed red potatoes, diced tomatoes (with their juice), vegetable broth, and tomato paste. Stir everything together and bring the mixture to a gentle boil.
