Ingredients
  

1 lb fresh salmon fillet (skin removed)

1 sheet of puff pastry (thawed if frozen)

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/4 cup dill, chopped (fresh or dried)

1 clove garlic, minced

1/2 lemon, juiced

1 egg (for egg wash)

Salt and pepper to taste

1 tablespoon olive oil

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a skillet, heat olive oil over medium heat. Add minced garlic and chopped spinach, sauté for about 2-3 minutes until spinach is wilted. Remove from heat and let cool slightly.

      In a bowl, mix together the softened cream cheese, dill, lemon juice, salt, and pepper. Then, fold in the sautéed spinach.

        Roll out the puff pastry on a lightly floured surface until it is about 1/8 inch thick. Cut into a rectangle large enough to wrap around the salmon fillet.

          Place the salmon fillet in the center of the pastry. Spread the spinach and cream cheese mixture over the top of the salmon.

            Fold the puff pastry over the salmon, sealing in the edges to create a wellington shape. Trim excess pastry if necessary.

              Beat the egg in a small bowl and brush it over the top of the pastry to give it a golden finish.

                Place the wrapped salmon on the prepared baking sheet and bake for 25-30 minutes, or until the pastry is golden and flaky.

                  Allow the Salmon Wellington to cool for a few minutes before slicing.
