Ingredients

2 salmon fillets (about 6 oz each)

8 oz shrimp, peeled and deveined

2 cups broccoli florets

1 cup sweet corn (fresh or canned)

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Prepare the Broccoli: In a pot of boiling salted water, blanch the broccoli florets for about 2 minutes until vibrant green, then drain and set aside.

Cook the Shrimp: In a medium skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, then add the shrimp. Cook for 3-4 minutes until the shrimp turn pink and are fully cooked. Season with a pinch of salt, pepper, and red pepper flakes (if using). Remove shrimp from the skillet and set aside.

Make the Cheesy Mixture: In the same skillet, combine the softened cream cheese, sweet corn, lemon zest, and half of the shredded cheddar cheese. Stir until the cheese is melted and everything is well combined.

Combine the Ingredients: In a large mixing bowl, combine the blanched broccoli, cooked shrimp, and the cheesy corn mixture. Stir gently to combine everything evenly.

Prepare the Baking Dish: Lightly grease a baking dish with olive oil. Place the salmon fillets in the dish and season them with salt and pepper.

Top the Salmon: Spoon the broccoli and shrimp cheesy mixture on top of each salmon fillet, covering them completely.

Add Cheese Topping: Sprinkle the remaining shredded cheddar cheese over the top of the broccoli and shrimp mixture.

Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the cheese is bubbly and golden.

Garnish and Serve: Once out of the oven, let the dish cool for a minute. Garnish with chopped fresh parsley before serving.
