2 lbs pork tenderloin

2 tablespoons fresh rosemary, chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 apples (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup pure maple syrup

1 tablespoon apple cider vinegar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pork: In a small bowl, mix the chopped rosemary, minced garlic, olive oil, salt, and black pepper to form a paste. Rub this mixture generously all over the pork tenderloin, ensuring it's evenly coated.

      Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Once hot, add the pork tenderloin and sear for approximately 3-4 minutes on each side until golden brown. This helps to lock in the juices.

        Roast the Pork: Transfer the skillet to the preheated oven and roast the pork tenderloin for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

          Prepare the Apple Sauce: While the pork is roasting, combine the diced apples, maple syrup, apple cider vinegar, cinnamon, and nutmeg in a medium saucepan over medium heat. Stir to mix well and bring to a gentle simmer. Cook for about 10-15 minutes or until the apples tender and the mixture has thickened slightly. Stir occasionally to prevent sticking.

            Rest the Pork: Once the pork is done roasting, remove it from the oven and let it rest for 5-10 minutes. This step is crucial as it allows the juices to redistribute throughout the meat, keeping it moist.
