Ingredients

1 cup fresh strawberries, hulled and halved

1 tablespoon honey

1 tablespoon balsamic vinegar

1 teaspoon olive oil

Pinch of salt

1 cup ricotta cheese

1 tablespoon lemon zest

1 tablespoon powdered sugar

4 slices of crusty bread (like sourdough or ciabatta)

Fresh mint leaves, for garnish

Optional: crushed pistachios, for topping

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Roast Strawberries: In a mixing bowl, combine the halved strawberries, honey, balsamic vinegar, olive oil, and a pinch of salt. Spread them out on a baking sheet lined with parchment paper. Roast in the preheated oven for about 15-20 minutes, until the strawberries are soft and caramelized.

Whip the Ricotta: In a medium-sized bowl, use a hand mixer or whisk to combine the ricotta cheese, lemon zest, and powdered sugar until it’s creamy and smooth.

Toast the Bread: While the strawberries are roasting, toast your bread slices until golden brown. You can do this in a toaster or on a grill for added flavor.

Assemble Toast: Spread a generous layer of the whipped ricotta on each slice of toasted bread. Top with the roasted strawberries, drizzling any remaining juices from the baking sheet over them.

Garnish: Finish with fresh mint leaves and, if desired, a sprinkle of crushed pistachios for added crunch.

Serve: Serve immediately and enjoy the delightful combination of flavors!
