Roasted Peaches with Mozzarella

4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and black pepper to taste

8 ounces fresh mozzarella, torn into pieces

1/4 cup fresh basil leaves, roughly chopped

1 tablespoon honey

Optional: Crushed red pepper flakes for heat

Instructions
 

Preheat your oven to 400°F (200°C).

    Place the halved peaches, cut side up, on a baking sheet. Drizzle the olive oil and balsamic vinegar over them.

      Season the peaches with salt and black pepper to taste.

        Roast the peaches in the oven for 15–20 minutes, until they are soft and caramelized around the edges.

          Remove the peaches from the oven and let them cool slightly for about 5 minutes.

            While the peaches are cooling, tear the fresh mozzarella into bite-sized pieces.

              Assemble the dish by placing the roasted peach halves on a serving platter, and topping each half with pieces of fresh mozzarella.

                Drizzle honey over the top and sprinkle the chopped basil and optional crushed red pepper flakes for an added kick.

                  Serve warm as a delightful appetizer or as part of a summer salad.
