Ingredients

2 ribeye steaks (1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 sprig fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

4 medium potatoes, thinly sliced

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon paprika

1 tablespoon butter (for greasing the baking dish)

Instructions

Prepare the Potatoes: Preheat your oven to 375°F (190°C). Grease a baking dish with butter. In a large bowl, combine the heavy cream, cheddar cheese, Parmesan cheese, paprika, and a pinch of salt and pepper.

Layer the Potatoes: Arrange half of the sliced potatoes in an even layer in the greased baking dish. Pour half of the cheese and cream mixture over the potatoes. Layer the remaining potato slices on top and finish with the rest of the cheese sauce, spreading it evenly.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 20 minutes or until the cheese is bubbly and the potatoes are tender.

Cook the Steak: While the potatoes are baking, heat olive oil in a heavy skillet over medium-high heat. Season the ribeye steaks generously with salt, pepper, and chopped rosemary.

Sear the Steaks: Once the oil is hot, add the steaks to the skillet. Sear the steaks for 4-5 minutes on each side for medium-rare (or adjust the cooking time to your preferred doneness). Add minced garlic to the skillet during the last minute of cooking for added flavor.

Rest the Steak: Remove the steaks from the skillet and let them rest on a cutting board for about 5-7 minutes, allowing the juices to redistribute.

Final Touch: Once the scalloped potatoes are done, remove them from the oven and let them cool for a few minutes before serving.

Serve: Slice the ribeye steaks against the grain and serve alongside generous portions of cheesy scalloped potatoes.

                  Prep Time: 15 minutes | Total Time: 1 hour | Servings: 2

                    - Presentation Tips: Serve the steak on a warm plate, topped with a sprinkle of fresh rosemary, with a side of scalloped potatoes presented in a rustic style. Add a small salad for color and freshness. Enjoy!
