Ingredients

1 ½ cups all-purpose flour

1 tsp cocoa powder

1 tsp baking soda

½ tsp salt

1 cup vegetable oil

1 cup granulated sugar

1 cup buttermilk, at room temperature

2 large eggs, at room temperature

2 tbsp red food coloring

1 tsp vanilla extract

1 tsp white vinegar

For the Cream Cheese Frosting:

1 cup cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

2-3 tbsp heavy cream (or milk) for consistency

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.

Prepare Dry Ingredients: In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.

Mix Wet Ingredients: In a large mixing bowl, combine vegetable oil and granulated sugar. Mix until well combined. Add in the buttermilk, eggs, red food coloring, vanilla extract, and white vinegar. Mix thoroughly until smooth.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Don't overmix; a few lumps are fine.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cakes: Once done, remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Make the Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing until incorporated. Add the vanilla extract and heavy cream (or milk) to achieve the desired consistency.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer of cake on top and frost the top and sides of the cake with the remaining cream cheese frosting.

Chill and Serve: Chill the decorated cake for about 30 minutes to set the frosting before slicing and serving.
