4 cups red cabbage, finely shredded

1 medium carrot, grated

1/2 red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

2 green onions, sliced

1/4 cup apple cider vinegar

2 tablespoons honey

1 tablespoon Dijon mustard

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1/4 cup sunflower seeds or chopped nuts for crunch

Instructions
 

In a large bowl, add the finely shredded red cabbage, grated carrot, sliced red bell pepper, chopped cilantro, and sliced green onions. Toss the ingredients together to evenly distribute them.

    In a small bowl, whisk together the apple cider vinegar, honey, Dijon mustard, and olive oil until well blended to create a dressing.

      Pour the dressing over the cabbage mixture and toss well to ensure all the ingredients are coated evenly.
