200g feta cheese, crumbled

300g cherry tomatoes, halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon honey

Salt and pepper to taste

Fresh basil leaves, for garnish

Pita chips or crusty bread, for serving

Instructions
 

Preheat your oven to 200°C (390°F).

    In a mixing bowl, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, honey, salt, and pepper. Toss until the tomatoes are well coated.

      Spread the seasoned cherry tomatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the tomatoes are burst and slightly caramelized.

        While the tomatoes are roasting, prepare the feta. In a medium bowl, crumble the feta cheese and set aside.

          Once the cherry tomatoes are done, remove them from the oven and allow to cool slightly.

            In a food processor, combine the roasted cherry tomatoes (with juices), crumbled feta, and a drizzle of olive oil. Blend until smooth and creamy, scraping down the sides as necessary. Adjust seasoning with more salt and pepper to taste.

              Transfer the dip to a serving bowl and drizzle with extra olive oil on top if desired. Garnish with fresh basil leaves.

                Serve immediately with pita chips or slices of crusty bread for dipping.
