2 packs of instant ramen noodles (discard seasoning packets)

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

1 cup broccoli florets

1 red bell pepper, julienned

1 cup snap peas

½ cup carrots, julienned

3 green onions, sliced

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon chili paste (optional for heat)

2 eggs (optional, for protein)

Toasted sesame seeds for garnish

Instructions
 

Cook the noodles: Bring a pot of water to boil and add the instant ramen noodles. Cook for about 3 minutes or until just tender. Drain and set aside.

    Prepare the stir fry: Heat sesame oil in a large skillet or wok over medium-high heat. Once hot, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.

      Add vegetables: Toss in the broccoli florets, red bell pepper, snap peas, and carrots. Stir-fry for about 5-7 minutes until the vegetables are vibrant and slightly tender but still crisp.

        Incorporate the noodles: Add the cooked ramen noodles to the skillet with the vegetables. Pour in the soy sauce, hoisin sauce, rice vinegar, and chili paste (if using). Toss everything together gently until the noodles are well coated and heated through.

          Optional eggs: If you'd like to add eggs for protein, push the noodle mixture to one side of the skillet. Crack the eggs directly into the open side and scramble them until cooked, then mix into the stir-fry.

            Garnish and serve: Remove from heat and stir in sliced green onions. Top with toasted sesame seeds for extra crunch.
