Ingredients
  

1 tablespoon vegetable oil

1 cup broccoli florets

1 cup bell peppers, sliced (mix of red and yellow)

1 cup snap peas

1 cup carrots, julienned

3 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon rice vinegar

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Cooked rice or noodles (for serving)

Instructions
 

Heat the vegetable oil in a large skillet or wok over medium-high heat.

    Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.

      Throw in the broccoli florets and carrots, stir-frying for about 3 minutes.

        Next, add the bell peppers and snap peas, continuing to stir-fry for another 2-3 minutes until the vegetables are tender-crisp.

          Pour in the soy sauce, sesame oil, and rice vinegar, tossing the vegetables to coat them evenly in the sauce.

            Season with salt and pepper to taste, stir-frying for another minute.

              Remove from heat and sprinkle with sesame seeds before serving.

                Serve the stir fry over a bed of cooked rice or noodles for a wholesome meal.
