2 cups white cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 ½ cups whole milk

1 tablespoon unsalted butter

1 small onion, finely diced

1 jalapeño, finely chopped (seeds removed for less heat)

2 cloves garlic, minced

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium saucepan over medium heat, melt the butter. Add the diced onion and jalapeño, sautéing until they start to soften, about 3-4 minutes.

    Add the minced garlic, ground cumin, and smoked paprika to the pan. Cook for an additional 1-2 minutes, stirring frequently, until fragrant.

      Lower the heat to medium-low and pour in the whole milk. Stir continuously until the milk is warm but not boiling.

        Gradually add the shredded white cheddar and Monterey Jack cheese to the saucepan, stirring until the cheeses are completely melted and the mixture is smooth.

          Season with salt to taste, adjusting if needed. If the queso is too thick, you can add a little extra milk until you reach the desired consistency.

            Once the queso is fully blended and creamy, remove from heat and transfer it to a serving bowl.

              Garnish with fresh chopped cilantro for a burst of flavor and color.
