3 cups pulled pork (cooked and shredded)

2 cups mashed potatoes (prepared)

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup corn (fresh or frozen)

1 medium onion, chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon tomato paste

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

½ cup beef or vegetable broth

Optional: 1 cup cheddar cheese, grated

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

    Add Veggies: Stir in the chopped carrots, corn, and peas. Cook for an additional 5 minutes until they start to soften.

      Mix Ingredients: Add the pulled pork to the skillet, along with Worcestershire sauce, tomato paste, smoked paprika, dried thyme, and broth. Season with salt and pepper. Stir thoroughly to combine and let it simmer for about 10 minutes.

        Assemble the Pie: Preheat the oven to 400°F (200°C). In a baking dish, evenly spread the pulled pork mixture at the bottom. Carefully layer the mashed potatoes over the top, smoothing it with a spatula. If desired, sprinkle grated cheddar cheese on top for extra flavor.

          Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbly.

            Serve: Once out of the oven, let the shepherd’s pie rest for about 5 minutes before serving. This will help the flavors meld together.
