2 cups cooked pulled pork (use pre-cooked or leftovers)

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup diced red onion

1/2 cup corn (fresh, canned, or frozen)

1/4 cup fresh cilantro, chopped

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

Olive oil, for cooking

Salsa and sour cream for serving

Prepare the Filling: In a large bowl, combine the pulled pork, smoked paprika, garlic powder, cumin, diced red onion, corn, and cilantro. Mix well and season with salt and pepper to taste.

    Heat the Tortillas:

      - Preheat a large skillet over medium heat.

        - Lightly brush one side of a tortilla with olive oil and place it in the skillet, oiled side down.

          Assemble the Quesadilla:

            - On one half of the tortilla, sprinkle 1/4 cup of cheddar and Monterey Jack cheese.

              - Add a generous portion of the pulled pork mixture on top of the cheese, then sprinkle with an additional 1/4 cup of mixed cheese.

                - Fold the other half of the tortilla over to create a half-moon shape.

                  Cook the Quesadilla:

                    - Cook for about 3-4 minutes on one side until the cheese has melted and the tortilla is golden brown.

                      - Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is equally golden and crispy.

                        Repeat: Repeat the process with the remaining tortillas and filling to make additional quesadillas.

                          Serve: Once all quesadillas are cooked, let them rest for a minute before slicing into wedges. Serve with salsa and sour cream on the side.
