2 cups cooked pulled pork

1 large bag of tortilla chips

2 cups shredded sharp cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn (frozen or fresh)

1 medium jalapeño, sliced

1/2 cup diced tomatoes

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

1 teaspoon cumin

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the pulled pork, smoked paprika, cumin, salt, and pepper, stirring to combine. Heat for about 5-7 minutes until warmed through.

      On a large baking tray, spread out the tortilla chips evenly.

        Evenly distribute the warmed pulled pork over the tortilla chips.

          Next, sprinkle the black beans and corn over the pulled pork, followed by the sliced jalapeños and diced tomatoes.

            Generously layer the shredded cheddar cheese over the entire tray.

              Place the tray in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

                Remove the nachos from the oven and drizzle sour cream on top.
