1 pound beef chuck, cut into 1-inch cubes

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 carrots, sliced

3 celery stalks, sliced

4 cups beef broth

2 medium potatoes, diced

2 cups fresh spinach

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 pound potato gnocchi

Fresh parsley, chopped (for garnish)

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear them until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Stir in the sliced carrots and celery, cooking for another 5 minutes to soften the vegetables.

        Return the browned beef to the pot. Pour in the beef broth, add the diced potatoes, dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a boil.

          Once boiled, reduce the heat to low, cover, and let the stew simmer for about 1 hour, or until the beef is tender.

            After an hour, stir in the fresh spinach and potato gnocchi. Cook for an additional 3-5 minutes or until the gnocchi float to the surface, indicating they are cooked through.
