4 medium-sized potatoes, peeled and diced

6 cloves of garlic, minced

1 medium onion, finely chopped

4 cups vegetable broth

1 cup heavy cream or coconut milk (for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 2-3 minutes until fragrant.

      Add the diced potatoes to the pot and stir to combine with the onion and garlic.

        Pour in the vegetable broth and sprinkle in the dried thyme. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 20 minutes or until the potatoes are tender.

          Once the potatoes are cooked, remove the pot from heat. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a traditional blender in batches.

            Return the blended soup to the pot over low heat, and stir in the heavy cream or coconut milk. Season with salt and pepper to taste. Heat gently for an additional 5 minutes, stirring occasionally.

              Serve hot, garnished with freshly chopped chives. A drizzle of olive oil on top can also elevate the look and flavor.
