4 medium-sized potatoes, peeled and cubed

2 cups broccoli florets

1 cup Pepper Jack cheese, shredded

6 large eggs

1 cup milk (or plant-based alternative)

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup green onions, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, bring water to a boil and add the cubed potatoes. Cook until fork-tender, about 10-12 minutes. Add in the broccoli florets during the last 3 minutes of cooking. Drain and set aside.

      In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until smooth and well combined.

        Grease a 9x13 inch baking dish with olive oil. Layer the cooked potatoes and broccoli evenly across the bottom of the dish.

          Sprinkle half of the shredded Pepper Jack cheese over the vegetables.

            Pour the egg mixture over the layered potatoes and broccoli, ensuring it's evenly distributed.

              Top with the remaining Pepper Jack cheese for a delicious cheesy crust.

                Bake in the preheated oven for 30-35 minutes, or until the eggs have fully set and the top is golden brown.

                  Once out of the oven, allow the casserole to cool for a few minutes before slicing.

                    Garnish with chopped green onions before serving.
