4 medium potatoes, peeled and diced

1 can (15 oz) cannellini beans, drained and rinsed

1 cup vegetable broth

1 cup heavy cream or coconut milk for a dairy-free option

1 medium onion, finely chopped

2 garlic cloves, minced

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes to the pot, along with the smoked paprika, cumin, and a pinch of salt and pepper. Stir well to coat the potatoes with the spices.

        Pour in the vegetable broth, bring to a boil, and then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes or until the potatoes are tender.

          Once the potatoes are cooked, add the drained beans and continue to simmer for an additional 5 minutes.

            Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, blend about half of the soup.

              Stir in the heavy cream (or coconut milk) and warm through for another 2-3 minutes. Adjust seasoning with salt and pepper to taste.

                Once the soup is heated through, remove from heat and let sit for a few minutes to thicken slightly.
