4 medium-sized potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

1 tablespoon butter (or olive oil for a vegan option)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh dill or chives for garnish

In a large pot, melt the butter over medium heat. Add the chopped onions and cook for about 5 minutes until they become translucent.

    Stir in the minced garlic and cook for an additional minute, allowing it to become fragrant.

      Add the diced potatoes to the pot, followed by the vegetable broth and dried thyme. Bring the mixture to a boil.

        Once boiling, reduce the heat to low and simmer the soup for about 15-20 minutes, or until the potatoes are tender.

          Using an immersion blender, puree the soup until smooth. (Alternatively, you can transfer the soup in batches to a regular blender.)

            Return the soup to the heat and stir in the heavy cream or coconut milk. Keep cooking on low for another 5 minutes until heated through.

              Season with salt and pepper to taste.

                Serve hot, garnished with fresh dill or chives.
