1 can (20 oz) pineapple slices, drained (reserve juice)

1/4 cup butter, melted

1/2 cup brown sugar

1/2 tsp ground cinnamon

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1/2 cup milk

1 tsp baking powder

1/2 tsp baking soda

A pinch of salt

Maraschino cherries (optional, for garnish)

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with non-stick cooking spray or lightly with butter.

    In a small bowl, mix the melted butter and brown sugar until smooth. Spread this mixture evenly across the bottom of the prepared cake pan.

      Place the pineapple slices in a single layer atop the brown sugar mixture. Add a maraschino cherry in the center of each pineapple slice if desired. Sprinkle ground cinnamon over the top for added flavor.

        In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

          Beat in the eggs one at a time, followed by the vanilla extract. Mix until fully incorporated.

            In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.

              Carefully pour the batter over the arranged pineapple in the cake pan, smoothing the top with a spatula to ensure even coverage.

                Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, let the cake cool in the pan for about 10 minutes, then carefully invert it onto a serving plate. Allow it to cool slightly before serving.
