Ingredients

2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1/2 cup dill pickles, thinly sliced

2 tablespoons cream cheese, softened

1 teaspoon Dijon mustard

1 tablespoon fresh dill, chopped (optional)

Salt and pepper to taste

Instructions

Prepare the Spread: In a small bowl, mix the cream cheese, Dijon mustard, fresh dill (if using), a pinch of salt, and pepper until well combined. This will be the spread for your sandwich.

Assemble the Sandwich: Spread half of the cream cheese mixture on one side of each slice of sourdough bread.

Layer the Cheese and Pickles: On one slice of bread (with the cream cheese spread facing up), sprinkle half of the shredded cheddar cheese, evenly layer the dill pickle slices, and then top with the remaining cheddar cheese. Place the second slice of bread on top, cream cheese side down.

Butter the Outside: Spread the softened butter on the outside of both slices of bread. This will give your sandwich a golden, crispy crust.

Grill the Sandwich: Heat a non-stick skillet over medium heat. Once hot, carefully place the sandwich in the skillet. Cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted. You may want to press it down lightly with a spatula for even grilling.

Serve: Once grilled to perfection, remove the sandwich from the skillet and allow it to cool for a minute before slicing it in half.

              Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 1

                - Presentation Tips: Serve the sandwich on a wooden cutting board, cut diagonally, and garnish with extra pickle slices and a sprinkle of fresh dill for a pop of color. Consider pairing with a bowl of tomato soup for a classic combo!
