Ingredients

4 large russet potatoes

1 tablespoon olive oil

1 teaspoon paprika

Salt and pepper to taste

1 lb sirloin steak, thinly sliced

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

2 cups shredded provolone cheese

1 tablespoon Worcestershire sauce

Optional: chopped fresh parsley for garnish

Instructions

Preheat your oven to 425°F (220°C).

Wash and scrub the russet potatoes thoroughly. Cut them into thick fries (about 1/4 inch thick).

In a large bowl, toss the fries with olive oil, paprika, salt, and pepper until evenly coated.

Spread the fries in a single layer on a baking sheet. Bake in the preheated oven for about 30-35 minutes or until golden brown and crispy, flipping halfway through.

While the fries are baking, prepare the Philly cheesesteak filling. In a large skillet over medium-high heat, add the sliced sirloin. Cook until browned, about 3-4 minutes.

Add the sliced onions and bell peppers to the skillet, sautéing until softened, about 5-7 minutes.

Stir in the Worcestershire sauce and cook for an additional minute. Remove from heat.

Once the fries are done baking, remove them from the oven and layer the steak and vegetable mixture evenly over the fries.

Sprinkle the shredded provolone cheese generously on top. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool slightly. Drizzle with extra Worcestershire sauce if desired, and garnish with chopped parsley.
